I am conducting a produce challenge on my Facebook page during the month of June. Each week we set a new challenge to help increase our consumption of fruits and vegetables. This week, the challenge is to incorporate 3 new fruits and 3 new vegetables into our food plan.
One of my new fruits for the week is mango. Mr Forever and I use to eat lots of mangos when we lived in California and they were local, but now that we live in New Hampshire, I have gotten out of the habit. Mangos are a great source of Vitamin C, Folate, Copper and are delicious!
Coincidently, a Facebook friend just happened to share this delicious Mango Salsa recipe with me and I was able to easily toss it together last night.
MANGO SALSA (Roberta Kosek)
2 mangos peeled, seeded and diced
1 red pepper seeded and diced
1 jalapeno pepper seeded and diced (you can use a few shakes of red pepper flakes)
1 lime zested and juiced
2 tablespoons white vinegar
1 tablespoons olive oil
2-3 tablespoons roughly chopped cilantro
Salt and pepper to taste.
Mix all ingredients together and chill.
Delicious on meats, fish and veggie burgers or used as a dip with raw veggies or tortilla chips.
